ADAM RAWSON LAUNCHES NEW GLOBAL TRAVELLER KITCHEN RESIDENCY AT THE GUNMAKERS

Hot young culinary talent Adam Rawson is bringing his acclaimed international cooking to Clerkenwell, with a new kitchen residency at popular local pub The Gunmakers. Crowned “Chef of the Year” at The YBFs in 2015 and named one of CODE Hospitality’s “30 under 30” for the way he is redefining London’s hospitality industry, Adam is renowned for his innovative dishes influenced by his global travels. His latest pub popup menu features his award-winning burgers from the past two “Slider Decider” competitions and a brand new burger inspired by his recent trip to Japan, as well as an array of bar snacks all with his original twist.

Visitors to Adam Rawson’s kitchen takeover at East London gem The Gunmakers can enjoy his broad lineup of Global Traveller burgers, including a first taste of the Japanese-themed Nippon Umai (aged beef, Chashu braised pork belly, Nambanshu sauce, wakame edible seaweed and wasabi mayo) plus both his “Slider Decider” challenge prize-winners. Champion from 2015 the Peruvian Pan Con Chicharrón (aged beef, crispy pork, aji rocotto ketchup, aji Amarillo mustard and salsa criolla) and 2016’s Global Traveller (aged beef, gorgonzola, balsamic onions, pancetta and truffle aioli) will be available alongside the pub’s specially-created new signature burger The Gunmakers (aged beef, Giovanna ham, Cornish brie, roasted pineapple, watercress and Mezcal BBQ sauce) and other intriguing combinations taking inspiration from across the world.

Served from Monday to Friday at lunchtimes and as sliders during the evenings, Adam Rawson’s Global Traveller burgers are all made with the finest Galician beef and are ideal accompanied by his irresistible spiced chips with garlic mayonnaise. Those looking for a light bite or smaller dishes to share over a few drinks at The Gunmakers can choose from a host of snacks with Adam’s inventive global touch, such as smokey pork belly with honey and soy, fried chicken with yuzu mayonnaise, and cheese rolls with smoked HP.

Described as “London’s Hottest Young Chef” by the Evening Standard, Adam Rawson has spent over a decade cooking in the UK and trained under some of the world’s most prestigious chefs including Nuno Mendes, Claude Bosi and Gordon Ramsay. Adam showcased his skills as head chef at a diverse collection of prominent restaurants across the capital ranging from White Rabbit to Lucky Chip and Pachamama, before opting to take a break from professional kitchens to explore gastronomic hotspots around the globe and discover their real wonders. He is passionate about bringing the most exciting flavours and ingredients from these authentic cuisines back to London now, through his successful series of supperclubs, popups and extended pub residencies.
