The new restaurant Hide and Fox will open on the 7th June 2019, it has been announced by owners Allister Barsby and Alice Bussi.
The restaurant, set in the beautiful village of Saltwood near Hythe, is the first project for the couple.
Allister and Alice have worked together for The Seren Collection, a unique group of hospitality venues in South West Wales. Prior to Wales, Allister spent three years as head chef at Gidleigh Park under Michael Caines and met Alice at The Bath Priory, where she was firstly sommelier and after restaurant manager.
Hide and Fox is said to be an exciting new dining experience combing the talent from two Michelin star trained chef Allister and Hotel Cateys Food and Beverage Manager 2018, Alice.
You can expect quality modern British cuisine served in an intimate and relaxed environment, with a focus on carefully sourced seasonal ingredients and fine wines.
Allister Barsby, chef owner said :
“This is a realisation of a dream for me, moving back to my home county to open our first solo venture. Kent has some of the finest produce in the UK and I can't wait to get them on the menu and to seek out more of what Kent has to offer. It's the beginning of a journey and with Alice by my side I know it will be a special one.”
Alice Bussi, manager owner said :
“I have often visited Kent with Allister and I am now very excited to be settling in this beautiful coastal county. I have been working for incredible properties since I was 15 years old and this is the time for me to create something of my own, with the amazingly talented Allister. We are extremely excited.”
Hide and Fox will host an invitation only evening on the Friday and officially open its doors Saturday 8th June.
