Creating standout spring menus

⁣With the Easter weekend only a few months away, CHEF consultant Andrej Prokes, former Executive Sous Chef at The Ritz London and Sous Chef at The Fat Duck in Bray, discusses how chefs can make the most of the seasonal opportunity.

“When it comes to key calendar moments such as Easter, celebration takes centre stage. We see families and friends come together to enjoy the very best food and drink. In fact, around 60% of UK consumers now say they eat out as ‘an occasion’ on a monthly basis, with millennials most likely to celebrate with a meal out.* As special occasions increasingly take place in restaurants, we anticipate expectations of an impeccable experience will equally grow.**

“During these periods, enabling sharing and interaction between diners is key. For big groups for example, we’re seeing a growing trend for serving traditional meals such as roast dinners on a big sharing platter or board, with everything from the meat and potatoes to side dishes all on one plate.

“When maximising sharing opportunities in this way, it’s important that all guests feel included. And it’s no secret that catering for different dietary needs on one plate can present challenges for chefs. However, it needn’t require hours of extra preparation and additional ingredients. By using bought in products, chefs can eliminate the need to prepare multiple options, save time and cut down on costs.

“Take the CHEF All Natural Lamb Stock for example. It’s made from 3kg of lamb bones per litre of stock, carefully sourced vegetables, herbs, water – and nothing else. It’s free from gluten, additives and preservatives, meaning that chefs needn’t prepare a separate sauce for those who are avoiding gluten.

“We all know that using sharing dishes effectively can add theatre to the presentation of your dish, creating a talking point and a shareable moment for social media. However, at CHEF, we also understand that impressive presentation takes time and craftmanship. Our mission is to create stocks and sauces that help give chefs quality, time-saving solutions to allow them to be creative in the kitchen. The result: a range of products to help you create dishes that you’re proud to serve this spring.”
