Serial restaurateur Matt Wells - who co-founded neighbourhood venues The Dairy and Counter Culture with Robin and Sarah Gill, created Knife Steakhouse, and also recently backed 24 The Oval - is behind the venture. He comments: "Bermondsey is an incredible lively hub, buzzing with innovation and creativity. It offers both established restaurants and new concepts and is the ideal spot for Dan’s seasonally-driven, comforting dishes. We’re dedicated to great beer so it seemed the perfect fit, and we’ll be making the most of our location on the ‘beer mile’ by partnering with our neighbouring brewers, with fledgeling plans to open our own in late 2019."
Led by Chef Dan Wilson, the new venue will feature the same friendly, casual atmosphere which made the original such a critical and neighbourhood hit, with a fresh focus on beer and an extensive minimal-intervention wine list. The menu will be drawn from British seasonality and inspired by European and British culture; working with suppliers who have a level of accountability and sustainability and their heart on the land.
Chef Dan notes: "Dandy the original was in a driveway in London Fields. It was bootleg and it was beautiful, but it was always a temporary spot. The journey to Dandy ‘3.0’ has been an incredible one. I can’t wait to bring that original Dandy spirit to London Bridge and finally open the doors to a permanent site."
