Located near Peebles, just 30 minutes from Edinburgh, Cringletie House is a former Baronial castle in the heart of the beautiful Scottish Borders.
Iain lives locally and until recently was based at Coltman’s Deli and Kitchen on the High Street in Peebles, where he had built a reputation for excellence and innovation using local and seasonal produce.
With nearly 20 years of experience, Iain has also worked at the five star Isle of Eriska Hotel, Spa & Island, the 3AA Rosette Rowhill Grange Hotel and at the 2AA Rosette and Michelin-listed Livingston’s Restaurant in Linlithgow, where he was head chef.
Iain started his new role on 21 June heading up Cringletie’s kitchen. As well as managing the hotel’s team of excellent catering staff and working closely with local suppliers, Iain will be responsible for planning new, seasonally-driven menus and is looking forward to a fresh challenge.
