Shippon by Mark Ellis opens this week

North Wales’ top luxury holiday park, Plassey, has announced that it will be opening the doors to its brand new and superbly unique restaurant and lounge bar, Shippon by Mark Ellis, this week.

Dubbed the new ‘jewel in the crown’ of the park, the Shippon restaurant is set to open on Friday 25th May 2018, under the direction of patron chef, Mark Ellis.

The Shippon will bring a fantastic new dining experience to the North Wales border, quite unlike anything currently available in the area. It will provide all guests with ‘affordable luxury’, with a range of specially created menus to suit all tastes, whether that be in the fantastic bar and lounge area or modern restaurant space that offer real value for money and a certain opulence, often reserved for high priced restaurants.

To add to the indulgence, the restaurant will also have a dedicated wine tasting room, where guests can book a tasting experience – offering a truly unique experience to visitors of the Shippon, which has not been seen in restaurants of this type before.

Mark Ellis, who was representative for the North West on the popular BBC series ‘Great British Menu’ two years in a row, has said that he will be bringing the same philosophy to the Shippon that has brought him success with his first restaurant, Allium, in Tattenhall, Cheshire, which opened last year.

He said, “we will be using cookery techniques, old and new, to create a culinary experience, using local suppliers and produce where we can, to create stunning dishes that can’t be experienced anywhere else, whether it is a light snack or lunch, steak and a glass of wine or a 6-course tasting menu experience.”

The Shippon will also be catering extensively for vegetarians, vegans, gluten intolerance and dairy intolerance as well as all other dietary requirements, so all food lovers can come and enjoy what the restaurant has to offer.

The amazing food and drink aren’t the only star of the show at the Shippon though. Built within the walls of an old cow shed, which formed part of a model dairy in the early twentieth century, the building has been lovingly transformed into a beautiful example of superb interior design, where old seamlessly combines with new to provide many original quirky features, such as the old feeding troughs which have been left exposed around the bar. This, along with the artful culinary skill of Mark Ellis, will make dining at the Shippon a truly unique experience which will excite foodies, wine buffs and interior design fanatics alike.

The opening of the restaurant will provide another feather in the cap of the Plassey Holiday Park, which has enjoyed its luxury status for many years, and has recently been awarded the AA Platinum Status, a new grading for elite establishments. Owners of Plassey Holiday Park, John and Sarah Brookshaw, had this to say about the opening:
