1. What savoury fillings are popular at the moment, and what flavours are expected to trend soon?
Pies and pastries are a great way to get a hearty, fulfilling meal on the move. Also, pies are imbedded in our culture and are a much loved British favourite, a classic chicken and mushroom or beef and ale pie is always welcome. However with changing food trends there are opportunities for turning these classics into a healthy alternative for the vegetarian, vegan and gluten free markets. And as brexit has highlighted the importance of sustaining the fishing industry, chef’s will be tinkering with their fish pie recipe’s.

The iVario is perfect for producing pie fillings. Low temperature braising is a great way of preparing these fillings overnight or the stews and casserole setting is ideal for preparing cottage pie or shepherds pie fillings easily and quickly.

The béchamel/veloute setting is great for preparing sauces for the fillings and the boil potato setting is great for preparing mashed potato for the toppings. The iCombi is ideal for baking pies using the puff pastry setting or the crisp up setting for blind baking. The savoury bakes and bake/convenience settings are also great settings for finishing off pies, sweet or savoury.
