68It was second time lucky for Arthur Quin, a 19 year old chef de partie from Punchbowl Inn at Crosthwaite, Cumbria, as he entered for the second year in the North West Young Chef Competition, and this year, took the Cumbria Young Chef of the Year crown.

“I entered the competition last year and made it through to the Cumbria Heat. I had some great feedback from the judges, and wanted to come back and show them that I’d improved, which I’ve done!”

“I cook what I like to eat, so when I was planning my menu, I looked at what food was in season and local, but tried loads of ingredients to see what was tasty.”

The 2 and a half hour cook off took place at Kendal College on 26th March, as Arthur faced stiff competition from 3 other regional chefs; Archie Frost from Skiddaw Hotel, Arron Robertson from Ryebeck, and Ngqabutho Ncube from Storrs Hotel.

Arthur’s menu consisted of a Stornaway black pudding scotch duck egg starter with Lyth Valley damson ketchup and pickled onion jam.

50The main course was West Coast sea bass with cauliflower, raisin, and scallop.

Arthur completed his trio of dishes with sticky coffee sponge with glazed pear, honey and Armagnac.

The judges on the day were chairman of Judges Brian Mellor, Managing Director of Essential Cuisine Nigel Crane, and Sales Manager for CHR Equipment (and joint sponsor of the competition,) Scott Walker.

Arthur will now go on to attend a master class with an acclaimed chef to hone skills with the industry’s best, before going on to represent Cumbria and compete against the other regional winners in the final of North West Young Chef Competition, which will be held at Manchester College on 7th May 2015.

The competition, sponsored by Essential Cuisine and CHR, looks for chefs under the age of 23 to cook a 3 course meal for 2 people featuring local and seasonal produce.
