Chef Director, Opus, 2 AA Rosettes and Café Opus at Ikon

David Colcombe is chef director of Opus, his two AA rosette restaurant in Birmingham, and its offshoot Café Opus, located in the Ikon gallery, also in Birmingham. David began with a catering course at Solihull Technical College. Deciding it would be best to move to London, he secured an apprenticeship with Anton Mosimann at The Dorchester Hotel on Park Lane who he describes as having taught him ‘everything I know about classical cooking’. He followed this with work at the Lygon Arms in Broadway, and the Swallow Hotel in Birmingham, where he helped the hotel achieve the city’s first five star status. David opened Opus at Cornwall Street in 2005 with his two business partners and it won its rosettes the following year. David says his style ‘is built around produce’. For him, the most exciting thing is sourcing the right ingredients and letting the flavour do the talking.
