How Chef Masaki Sugisaki Helped the UK Fall in Love with Japanese Cuisine

After moving to the UK 25 years ago, Masaki Sugisaki made it his mission to educate and inspire the British audience about Japanese cuisine. He now runs Dinings SW3 in Knightsbridge, after previous experience at the renowned restaurant Nobu. Masaki's style sees him combine European influences with Japanese culture and locally-sourced ingredients, for a unique take on his home country's cuisine. In this video, watch as Masaki creates a Cornish red chicken udon noodle dish and tuna carpaccio with autumn truffle, while head chef Sean Kimpson cooks Koji-cured venison loin.

Small Contribution. Big Impact.

The Staff Canteen has always been more than a website—it’s a community, built by and for hospitality. We share the wins, the challenges, the graft, and the inspiration that keeps kitchens alive.

We believe in staying open to everyone, but creating this content takes real resources. If you’ve ever found value here—whether it’s a recipe, an interview, or a laugh when you needed it most—consider giving just £3 to keep it going.

A little from you keeps this space free for all. Let’s keep lifting the industry, together.
