Michelin-starred chef Tom Sellers creates his beef fat candle and roast duck

Tom Sellers, from Restaurant Story, creates two dishes from his award-winning menu at his London restaurant using a Rational oven 
 
The first dish is a dish that has been on the menu since the opening - a beef dripping candle made from rendered beef fat and served with crusty bread baked in the Rational oven; making this Tom's version of bread and dripping.
 
The second dish is a whole roast duck, glazed with honey and cardamom and roasted in the Rational oven; serving the breast pink and moist.
