The kit contains all the essential ingredients and gives chefs the confidence and tools to make a wide range of amazing dishes and advanced touches including; caviar pearls and larger liquid centered bubbles (using spherification and reverse-spherification techniques), rapid setting and heat-resistant (hot) jellies, hot and cold foams that will last for hours and hours without losing body or texture, eye-catching shot glass suspensions and even a flaming sorbet!
The recipes are easy to follow with step-by-step detailed instructions and all the equipment needed to turn your hand to a wide range of impressive techniques. The kit includes 50g tubs of Hy-Foamer, Calcium Chloride, Sodium Alginate, Calcium Lactate, Gellan Gum, Sugar-Ester and Xanthan Gum, a set of micro scales, measuring spoons, syringes and a FULL SET OF DETAILED AND ILLUSTRATED RECIPES.
