Paul Foster joins The Staff Canteen Live line up

Paul will be joining us for The Staff Canteen Live on Tuesday, January 20, at 11:30. We are extremely excited to welcome one of the UK’s finest young chefs to our live event in Birmingham.

Present: Head Chef at The Dining Room at Mallory Court, Leamington Spa

Past: Tuddenham Mill, Suffolk; Restaurant Sat Bains; L'auberge de Lille, Lyon; The French Laundry, San Francisco; WD50, New York; Le Manoir aux’Quat Saison, Oxford; Haigs Hotel, Coventry.

Michelin Stars: None yet!

Paul Foster pursued the traditional route to service upon deciding he would become a chef at the age of 10. After leaving college he took a role at a 2 AA Rosette restaurant in Coventry where he worked closely with the Head Chef.

Working under Sat Bains proved to be something of a finishing school for Foster. With Bains’ cuisine horizons begin to slowly disappear and Foster certainly possesses the instinctive creativity Bains demands of his underlings.

In 2010, Paul Foster took the Head Chef role at Tuddenham Mill, a Suffolk restaurant and hotel where he foraged for rare and uncultivated ingredients. He moved on to Mallory Court in 2014, building on the hotel's reputation for fine food.

His nouveau British cooking has earned him Observer Young Chef of the Year, 3 AA Rosettes and 6/10 in the Good Food Guide.
