Chef Patron of Midsummer House, two Michelin stars
Daniel Clifford is chef patron of Midsummer House in Cambridge, which he took over in 1998. The restaurant was awarded its first Michelin star in 2002, and a second followed in 2005. His first chef job was as a commis chef at the Howfield Manor Hotel in 1989. He then worked at The Bell Inn, and by 1993 was a demi-chef de partie at Marco Pierre White’s Box Tree. He worked at a number of restaurants throughout England before heading to France, where he worked with the chef Jean Bardet, who he credits as teaching him the value of quality ingredients. He became a senior sous chef at Rascasse in Leeds in 1996, where he worked until joining Midsummer House. In 2012 his dish was the winning main course in the BBC show Great British Menu. Daniel’s cooking has a modern focus underpinned by classical French technique.
