The Montenotte’s Panorama Restaurant releases daily zero-waste specials

In the heart of Ireland's picturesque landscape, The Montenotte stands out for its refined luxury and culinary innovation. Amidst its breathtaking views overlooking the bustling cityscape, The Montenotte’s Panorama Restaurant has recently unveiled its latest culinary venture: daily zero-waste specials. From innovative plant-based creations to sustainable seafood delicacies, every masterpiece embodies The Montenotte’s dedication to sustainability and gastronomic excellence.

Meticulously crafted to feature three to five small plates or snacks, Executive Chef Rudi Liebenberg and his team will make the most of the unused ingredients in the kitchen to reduce food wastage. Each dish showcases Chef Rudi’s culinary expertise and commitment to creativity in the kitchen, utilising locally sourced, seasonal ingredients to create a symphony of flavours.

The zero-waste specials of the day will feature delights such as: Cauliflower Pakora created using the leaves and ribs of the cauliflower combined with spices and chickpea flour then deep-fried and served with a chickpea water mayonnaise; the Beef Tallow with smoked and whipped rendered beef fat served with crispy bruschetta; Skin and Bones using crispy fish skins, fried cauliflower leaves, chicken skins, topped with whipped bone marrow with aquafaba mayonnaise; and a Pork Croissant Dumpling using dried croissants combined with egg and rendered pork fat. Guests will also be able to enjoy the likes of a Cauliflower Panna Cotta utilising the cauliflower stacks and set with gelatine, or an Orange Parfait with the peel of the orange to make a perfect parfait creation.
