This was my Bocuse D'or National qualifier dish it was a play on meat in aspic, with a lemon myrtle veil, pea mousse, there was a cauliflower cheese mousse, parmesan sable, lamb fat confit potato and Australian native tart and beetroot and anise myrtle roulade, I was super proud of what we put up
