Luke Holder confirmed for The Staff Canteen Live 2014

Luke Holder is the penultimate chef to be confirmed in the star line-up that will take part in next year’s The Staff Canteen Live event.
Globe-trotting Luke has developed his culinary tastes and experiences from spells in Dubai, Asia and Italy and is now a well established chef back in the UK, looking forward to March’s demonstration in Bournemouth.
He said: “It should be good fun and it is good exposure. The Staff Canteen is one of the most widely used sites by chefs in the industry. We are going to be demoing a pasta dish to give a little snapshot of what is available.”
Despite being born in Britain, Luke spent ten years of his childhood growing up in Dubai before back-packing for a year in South-East Asia where his passion for food grew and where he would eventually return to set up a fine dining restaurant in Thailand.
After moving back to the UK in 1998, Luke secured the position of commis chef at the Orrery restaurant in London. A busy next six years saw spells all across the capital including Sugar Reef, The Sloane Club and the Oxo Tower on the South Bank.
More travels abroad followed working under the likes of Stephane Buchholzer in Dubai and Enoteca Pinchiorri in his three Michelin starred restaurant in Tuscany.
Luke brought the Italian cooking philosophy back with him in 2008 where he became the head chef of The Lakeside Park Hotel on the Isle of Wight before taking his current post as head chef at Lime Wood Hotel in the New Forest.
After a successful debut year, The Staff Canteen Live will return on 11 & 12 March 2014 as part of the Hotel and Catering Show when six professional chefs will give live demonstrations and visitors will be invited to ask questions and take part in taste testers.
The event will be held at the Bournemouth International conference centre.
Check back to our website tomorrow morning when the final chef will be announced.
