Wild Garlic Seeds

The bulb in the ground shoots out the leaves, we take the leaves and we use them. They produce the flower, the flower then dies and then leaves the garlic seeds.!

The last and perhaps most unusual part of this popular wild foraged springtime plant is the seed heads.

They can be eaten raw and pack quite a punch but most pickle them to make wild garlic capers. Remove the seeds, leave in coarse salt for 3 days, wash and transfer to a sterilised jar. Cover with pickling liquor, usually made with apple cider vinegar, possibly with sugar or honey.
