Seaonal Update 16.01.12

Hello Chef

I hope you are well and had a good weekend.  Here’s a brief update on this week’s offerings

Mushrooms & Truffles

The second flush of South African Cep appears to be holding; a second delivery will arrive on Monday.  They are in great condition; clean and dry with no maggots.  We shall continue to make hay

We will be moving to Portugal this week for Girolles; cleaner and smaller than their American cousins.  Healthy European crops are in excellent condition for French yellow-legged Chanterelle and Pied de Mouton and Trompette, also coming from Portugal.  We will also now be working with cultivated French grey oysters, which are smaller and neater than the English variety.

The Italian White truffle season has passed and we will wait for the white Spring truffles to kick in.  In the mean time, Perigord are still in excelled condition with a regular, even size, a great nose and marbling and dark colouring.  Italian Black Winters are also available.
