Seasonal Update 27.01.12

I hope you are well and had a good week.  Here is what we have in store for the week ahead:
 
Mushrooms & Truffles
The mushroom season seems to be recovering after a mild winter; Portugal is in full swing offering a great variety.   We are receiving good Pied Mouton which is in lovely shape, clean, neat mushrooms with a good colour and texture.  Chanterelles are also coming in from Portugal and we can offer Grey or Yellow legged; the yellow chanterelles are small, neat, delicate little beauties with a vibrant colour and the grey are a little larger and sturdier.  Both varieties are in a good, clean condition.  Girolles are still enjoying a surprising, late second flush, also in Portugal.  These are beautiful, small, neat and clean with a good colour and apricot-like aroma.  Finally we are receiving Trompette de la Mort from America; they are lighter in colour than the Swedish and Finnish varieties we received in end of 2011, though more a charcoal grey than a pencil grey.  Again they are clean and tidy.  Unfortunately a lack of rain in South Africa means another week without Ceps, we will start exporting rain clouds to the region as soon as Luke comes back from his honeymoon on Monday. 
 
At present, we are only working with Black Italian Winter Truffles, which are in good condition.  They are lighter in colour than the Perigord we have previously seen and can be quite large in size (up to 200g approx.) but with a good aroma and marbling.
