Hello Chef,
Here’s a quick version of next week’s shape of things to come.
Wild Mushrooms & Truffles
We have a source of fresh, Bulgarian Cep’s arriving on Monday; hopefully the same source will be able to provide Trompettes and Mousseron in the weeks to come.  Trompettes are having a hard time in the sunshine and appear to be thin on the ground; please call the office (0207 498 5397) to see what we have in stock.  Dried Trompettes are available to tide you and your menu over.
Chanterelle, Girolle and Pied de Mouton are arriving fromScotland.  They are beautiful, cheaper and with less road miles; definitely a must on this autumn’s menu.  Smaller, consistent Girolles are also available fromPoland. 
Autumn truffles are scarce and a little on the small size.
The mighty White truffle has begun and our first truffle arrived this week, which was in good shape. Best days to order Monday & Weds before10am for next day second delivery. The nose was strong, but will improve to the point where a 20g bad boy will fill a room with its animal scent.
Next stop Perigord truffles. Traditionally these become good enough to sell at the beginning of December.

The full offering is so close we can smell it; we currently have the following in stock:

Hare
Grouse
Mallard
Wood Pigeon
Oven-ready Wood Pigeon breasts
Venison: Saddles, Haunch and Strip-loins

 Pheasants are being shot over the weekend and should be in the warehouse in two to three weeks.
