Wild Mushrooms & Truffle

Trompette & Chanterelle are still coming from America and we are carrying beautifully small, fine morels from Turkey until the beginning of the Bulgarian season towards the beginning of May.

Unfortunately, girolles and pied de mouton have finished for the season.  We do have small, clean, frozen girolles for those who still want to use girolles on the menu until the start of the new season, also in May.

Due to a quiet slump in the mushroom season, our wild and cultivated mix will contain chanterelle, king oyster, shemeji, chanterelle, trompette and pied bleu. We are looking forward to mousserons, St. Georges and a new season of girolles by the end of April.

Unfortunately we’ve had a short season for spring truffles and the fleeting season has now been and gone.  However, we have now had our last delivery of Italian Winter truffles and our first arrival of Italian Summer (black) truffles.  The winter truffles are in great condition, with a good nose and nice texture.  The Summer truffles are still early in the season with a delicate nose and we are expecting quality to improve as we move into the warmer months.

Fruit & Vegetables
The winter thaw has started for real!
In addition to our blossoming line of spring produce, including broad beans, peas and white asparagus, we are looking forward to the arrival of the following produce in our warehouse this week:

-         Ficoide glacial salad; a delicate iodine flavour with mild salinity and sparkling leaves
-         Metisse baby leaves; baby purple rocket style leaves with a full beet-like flavour
-       Franco Castel with a soft bitter note, perfect with blood oranges, toasted nuts and bayonne ham
-         Round hand grenade courgettes from Italy
-         French courgette flowers
-         Beautiful Italian round aubergines with an incredible deep purple colour
-       Alfonso mangoes lovely deep golden flesh colour with a sweet honey, floral flavour
-       Italian tomatoes with incredible colour, aroma and taste, a great reminder that summer is on its way! Including baby plum, cherry on the vine and adult plums.
-       Jersey Royal potatoes as featured in this week’s Caterer magazine

We still have a great array of citrus fruits, including delicious Spanish blood oranges and Italian leafy lemons, and roots, including beautiful Jerusalem artichokes and creamy chervil root, we are coming towards the end of the crosnes season now, but we still have some trickling through with a great texture.
