Wild Mushrooms & Truffle
Trompette & Chanterelle are still coming from America and we are carrying beautifully small, fine morels from Turkey until the beginning of the Bulgarian season towards the beginning of May.
Unfortunately, girolles and pied de mouton have finished for the season. We do have small, clean, frozen girolles for those who still want to use girolles on the menu until the start of the new season, also in May.
Due to a quiet slump in the mushroom season, our wild and cultivated mix will contain chanterelle, king oyster, shemeji, chanterelle, trompette and pied bleu. We are looking forward to mousserons, St. Georges and a new season of girolles by the end of April.
Unfortunately we’ve had a short season for spring truffles and the fleeting season has now been and gone. However, we have now had our last delivery of Italian Winter truffles and our first arrival of Italian Summer (black) truffles. The winter truffles are in great condition, with a good nose and nice texture. The Summer truffles are still early in the season with a delicate nose and we are expecting quality to improve as we move into the warmer months.
