Talented young chef, Liam Anderson from Freemasons at Wiswell, has secured himself a place in the North West Young Chef of the Year Competition. The eager chef cooked his way to success at the Lancashire heats on Wednesday 9th March at Preston College.
The competition, sponsored by Essential Cuisine and CHR, was hot as Liam battled it out against two other confident and talented young chefs; Rachel Pinder from the Assheton Arms and Thomas Kiely from The Palazzo in Burnley. All three chefs prepared a three course meal for two people featuring local and seasonal produce and were ready and raring to explain to the judges their individual method and
costingâs.
âWhen planning my menu I wanted to focus on the seasonality of my dishes by making sure I was using the best Lancashire produce for this time of year,â said the Lancashire heat winner.
Liamâs starter consisted of risotto of Spring Wood wild garlic and pearl barley, Nidderdale lamb sweetbread, broth of pickled onions and English parmesan. He followed his starter with a main course of Regs corn-fed chicken, new season Wyre Valley asparagus, charred leek and miso, yakitori livers on toast and a sauce of morels. Finally, Liam finished his winning menu with a Tomlinsonâs rhubarb and custard soufflĂ© and cardamom ice cream.
The judges on the day were Chairman of Judges â Brian Mellor, Essential Cuisineâs Business Development Chef â Jon Harvey-Barnes and Head Chef at the White Mare Hotel in Beckermet â Jon Fell. All chefs were equally impressed with Liamâs menu, with Jon Harvey-Barnes stating âthe presentation of Liamâs dishes were second to noneâ, Jon Fell followed this by saying âI really couldnât knock Liamâs soufflĂ© dessert, it really was mightily impressive.â
The Lancashire Young Chef of the Year had previously entered the competition, however he failed to reach the final as his food was good but the judges felt he needed further experience. As soon as this years competition came around Liam wasted no time in applying, feeling he was now far more confident and ready to take the Lancashire heats by storm â and he did just that. âI think not getting through last year was one of my main incentives for entering this year, I needed to prove to myself that I could do it.â
Liam will now go on to attend a master class with an acclaimed chef to hone skills with the industryâs best, before going on to compete against the other regional winners in the final of North West Young Chef Competition, which will be held at Manchester College on 10th May 2016.
âFreemasons have been great support leading up to the heats. My choices of dishes are currently on the menu at work, however tweaked slightly to fit the competitions requirements. Now leading up to the final I want to practice as much as I can whilst taking all the judges feedback on board. I really think entering last year and not getting through has made me far more determined for this year, which is a good thing. I entered the competition to better myself and to experience cooking against other massively talented chefs in the industry.â And who knows if Liam wins the final his success might rocket as far as his industry inspirations; Marcus Waring, Simon Rogan, Sat Bains etcâŠ
