Brian Grigor is the head chef at the one Michelin starred, Number One at the Balmoral.

The son of a gamekeeper, Brian Grigor started his professional career at The Balmoral in 1999, taught by Number One’s executive chef Jeff Bland.

He trained at the hotel for three years in different departments, before moving to the restaurant Number One for the year they got their first Michelin star. He then went on to work at another Michelin-starred restaurant, The Kitchin, and also helped to open Nick Nairn’s Dunblane restaurant.

In 2011, Brian worked at several restaurants, including a stint as head chef at Hadrian’s Brasserie. In 2012, he was crowned the very first ‘Game Chef of the Year’ at a competition in Kilmarnock with game supplier, Braehead Foods. It was in March 2014 when Brian returned to Number One and took on the role of head chef.

Number One at The Balmoral

The Balmoral Hotel caters for business meetings, weekend getaways and weddings. Located at Edinburgh’s most prestigious address, No. 1 Princes Street, the hotel offers 188 opulent suites and contemporary rooms.

Executive Chef Jeff Bland started at The Balmoral in 1997, shortly after it was purchased by Sir Rocco. A part of the Rocco Forte hotels group, their fine dining restaurant Number One was first awarded a Michelin star in 2003 and it has retained the star for fifteen consecutive years. In 2015, the restaurant was refurbished with fresh, contemporary décor including pieces from the Royal College of Art in London.

Food Style

Brian’s passion for home-grown Scottish produce shines through in his menu at Number One. He sources the very best, local ingredients from across the country to use in his dishes. Working alongside Executive Chef Jeff Bland, the cuisine at Number One at The Balmoral is ‘modern Scottish’.

Highlights of their local, fine dining menu include Balmoral smoked salmon, served with lemon butter, quails egg and caviar and an Inverurie hogget dish with baby gem, peas and mint yoghurt. The restaurant offers a three-course A La Carte menu, and two tasting menus with the option of seven or ten courses.
