David Hazell is head chef at the one Michelin starred, Paco Tapas in Bristol.

Like many chefs, David started out as a kitchen porter at a restaurant called Rouge in Bristol. His brother Johnny worked there as a chef, and he encouraged David to pursue a career as a chef. It was through his brother that David met Peter-Sanchez Iglesias and went on to work at Pi Shop and Paco Tapas.

After six years of working in restaurants, he landed himself a chalet and a chef job in ski season. He returned to Bristol and took a job as a commis chef for Freddy Bird at Bristol Lido.

David spent five years there, and worked his way up to senior sous chef. In 2016, David went to work as a chef de partie at The Ox, a steak and cocktail restaurant in Bristol. He was working on the josper grill and soon found himself enticed by that style of cooking.

At the time, David's brother Johnny worked at Casamia, and it was through him that David met Peter Sanchez-Iglesias. When Casamia moved sites in January 2016, the team opened a second restaurant called Pi Shop – a Naples-style pizzeria.

In July 2016, David got the job of head chef at Pi Shop. When Peter decided to open Paco Tapas later that year, he appointed David as head chef of the new restaurant.

Peter Sanchez-Iglesias and his family opened Paco Tapas in November 2016, completing their trio of waterside restaurants at The General. Inspired by childhood memories of the traditional tapas restaurants of Spain, Peter named the restaurant after his father. The small-plates menu has premium Spanish products but also showcases the best of South West produce. 

Paco Tapas was first awarded a star in the Michelin Guide UK 2018, less than a year after opening.

At the ceremony in September 2017, Peter told The Staff Canteen: "There's not many tapas bars in the world with stars! It's the team who create the consistency everyday, we have the most amazing ingredients and it was Jonray who said we should do the tapas bar where it is today. To go from that thought, to execution and then getting the star is amazing." 

Food style

David’s food style is seasonally driven and Paco Tapas sources the best quality seasonal ingredients available. When the menu was first created, it was a collaborative effort between Peter, David and Paco Tapas' development chef, Josh Green. The menu now changes regularly, with David developing most of the new dishes, but the charcoal grilling technique will always feature for meat and fish dishes.
