The Staff Canteen

OMA is one of the most talked-about recent additions to London’s dining scene, bringing a Greek-inspired menu to Borough Market.

Opened in April 2024 by restaurateur David Carter, the restaurant sits above its sister venue AGORA and offers a refined yet elemental dining experience centred around a dramatic open charcoal grill.

The dining room is minimalist but warm, with an industrial aesthetic softened by wooden floors and views over the bustle of the market below.

The restaurant’s culinary direction is led by head chef Jorge Paredes, whose pedigree includes a formative role at Mayfair’s acclaimed Sabor.

Jorge was recruited to bring David’s vision of fire‑driven Greek food to life, blending classical Mediterranean flavours with a bold, modern sensibility.

His cooking combines the simplicity and honesty of Greek ingredients with accents of Levantine spice and technique, producing dishes that are both rustic in origin and refined in execution.

For Jorge, OMA is about re‑imagining Greek

food for a London audience without compromising on authenticity. The restaurant’s name, meaning “raw” in Greek, nods both to the crudo plates that open the menu and to its unadorned approach to cooking over fire.

In just over a year, OMA has established itself as a defining voice in London’s contemporary Greek cuisine and one of the capital’s most exciting Michelin‑starred dining rooms.

ACCOLADES

From the moment it opened, OMA drew immediate critical acclaim, earning a Michelin star within its first year and being named “Opening of the Year 2025” for Great Britain and Northern Ireland.

Reviews from Grace Dent and Andy Hayler have highlighted the depth of flavour and theatricality of the menu, which showcases everything from pristine crudo plates of sea bass and trout to charcoal‑grilled lamb belly with mint salad, wild‑farmed laffa served warm with salt‑cod XO labneh, and clay‑pot giouvetsi of red prawns and orzo enriched with bone marrow.
