Tristan Mason is chef proprietor at the one Michelin starred, Restaurant Tristan in Horsham.

Tristan Mason has had a turbulent relationship with Michelin stars, having worked as head chef at three different restaurants which have claimed the much-desired accolade.

Despite having initially studied for a graphic design course, Tristan soon got the bug for cooking after a job washing pots in Brocket Hall. He trained under the tutelage of Marco Pierre White at The Mirabelle, a big influence on the young chef in his own work. He went on to work at The Greenhouse under head chef Paul Merrett, who taught him a more loose approach after his time spent learning the classics at The Mirabelle. He was then named head chef at The Hare in Berkshire. It was at there that Tristan tasted his first bite of Michelin-starred success at the young age of 29, claiming his star with only one other chef in the kitchen.

He later went on to depart Berkshire for a stint at London’s The Orrery, which was, at the time, already a Michelin star-winning restaurant.

This was less successful for the young chef as, during only a short time working there, The Orrery lost its Michelin star status under his leadership.

After a year residency, Tristan parted ways with the restaurant and this pushed him to opening his own self-titled restaurant in 2008, Tristan.

Tristan opted to open his restaurant in Horsham, having been drawn to one particular property. Unfortunately for the chef, his opening coincided with the global economic crisis. It was a tough beginning for Tristan, but the chef’s culinary skills helped him through.

He achieved a star in the Michelin Guide UK 2013 (along with three AA rosettes), this time for the restaurant that he built from the ground up – a personal goal that had clearly been of added significance following his time at The Orrery. At Tristan, he values a more familial atmosphere, with his partner running the front-of-house service.

Tristan’s menu is known for being reasonably priced with a high quality of service, as Mason aimed to compete with the other restaurants of Horsham. The Daily Telegraph described the restaurant as, “fabulous food at almost silly prices”. The restaurant is currently listed as the number one restaurant in Horsham, according to TripAdvisor.

Classically trained, Tristan has further developed his skills utilising his enthusiasm and love for good food. He brings the old and new together to create exciting and innovative dishes.

Devastating fire

Restaurant Tristan was gutted by a ‘devastating’ blaze on Christmas Eve in 2015. It was left looking like ‘Armageddon’ after the fire, according to owner Tristan Mason. But after weeks of repairing, cleaning and decorating, the restaurant reopened two months. At the time Tristan said: “It is a massive relief just to say that it is behind us now and we can move forward."
