Evan Moore is the head chef at Labombe by Trivet, the Mayfair restaurant awarded one Michelin star in the Michelin Guide Great Britain & Ireland 2026.

Located at COMO Metropolitan London on Old Park Lane, the restaurant won the accolade within its first year of service, marking a major milestone both for Evan and for the Trivet team’s second London site.

Labombe by Trivet is a partnership between the team behind two-Michelin-starred Trivet in Bermondsey and COMO Metropolitan London. Conceived as an evolution of the original Labombe wine bar concept at Trivet, it offers a more relaxed, wine-forward style of dining while maintaining the standards associated with Jonny Lake and Isa Bal’s flagship restaurant.

Early career and background

Evan brings more than a decade of experience from Dinner by Heston, including leadership roles in both the Knightsbridge and Melbourne kitchens.

He later spent two years in Catalonia, broadening his culinary perspective and developing a more relaxed, flavour-led approach, before taking on the kitchen at Labombe by Trivet.

That background is an important part of the restaurant’s identity. Labombe’s own description says Evan draws on international experience to blend European influences with the technical precision and standards he has built over his career, giving the restaurant a style that is more informal than Trivet, but still highly controlled.

From Trivet to Labombe

Evan works closely with Jonny Lake, chef co-founder of Trivet, with whom he has built a long-standing working relationship.

Jonny, alongside master sommelier Isa Bal, opened Trivet after the pair’s years together at The Fat Duck, and the restaurant has since established itself as one of London’s leading fine dining addresses, retaining two Michelin stars in 2026.

Labombe takes that same commitment to food and wine and reworks it in a different setting. When speaking to The Staff Canteen at launch, Jonny and Isa described it as a more relaxed, grill-led and sharing-plate-driven concept for Mayfair, while still being rooted in the same quality-first approach that defines Trivet.

Evan Moore’s cooking style

At Labombe, Evan leads a food offering designed to sit seamlessly alongside Philipp Reinstaller’s European-focused wine selection. The restaurant describes the menu as provenance-led and Pan-Mediterranean, drawing on the flavours of Italy, Spain, France and Turkey, with ingredient-led dishes that evolve seasonally and are guided by bold, playful flavour.

That style comes through clearly in the food itself. Opening coverage highlighted European-style snacks and small plates such as bottarga toast, grilled duck heart and cherry skewers, king oyster gildas and the hot tongue bun carried over from Trivet, followed by dishes including wild sea bass crudo, wild mushroom pici, grilled monkfish and costoletta alla Milanese.

Desserts were described as classic and unfussy, including Campari crème caramel and Jonny’s butter tart.

In February 2026, Labombe by Trivet was awarded its first Michelin star, just five months after opening in full restaurant form.

The award also came as Trivet retained its two Michelin stars, giving Jonny Lake and Isa Bal another major Michelin success while passing the baton at Labombe to Evan Moore and Philipp Reinstaller.

For Evan, the recognition marked his first Michelin star as head chef. The award reflected a restaurant built on collaboration, but it also underlined the role he has played in shaping Labombe’s own identity: flavour-led, wine-aware and relaxed in tone, but still grounded in strong technique and serious standards.
