Sushi Kanesaka is an intimate and traditional 13-cover omakase restaurant known for its authentic and exquisitely crafted sushi. With a deep-rooted passion for traditional sushi-making techniques, Kanesaka has brought a slice of Tokyo’s esteemed sushi culture to the heart of London, continuing his legacy of culinary excellence that began in Japan.

Biography:

Shinji Kanesaka honed his skills in Japan, training under revered sushi masters to perfect the art of sushi making. His dedication and meticulous attention to detail quickly distinguished him within the culinary world. After establishing his reputation in Tokyo, where his original restaurant also earned Michelin stars, Kanesaka decided to expand internationally, bringing his expert craft to London with Sushi Kanesaka.

Sushi Kanesaka London:

The restaurant can be found within 45 Park Lane, part of the Dorchester Collection, and is designed to reflect the serenity and meticulous nature of Japanese aesthetics, providing a tranquil backdrop for the dining experience.

With just a few seats at the sushi counter, guests can watch Chef Kanesaka at work, observing the precision and care with which each piece of sushi is prepared. The menu at Sushi Kanesaka showcases the finest fish and seafood, sourced daily for its freshness and quality. Traditional techniques such as ageing certain types of fish to enhance their flavour, and preparing sushi rice with a precise balance of vinegar, are hallmarks of Kanesaka’s sushi. The omakase menu is made up of around 18 pieces, with the stunning nigiri interspersed with dishes such as steamed abalone or grilled Kobe beef. Much of the seafood is from European waters, while the rice is from Yamagata.
