Wild Mushrooms & Truffles

White Truffle Italian white truffles have started and have a great nose for the early crop. The season tends to last just long enough for a New Years Day white truffle & scrambled egg breakfast. Fresh Cep supply is regular without being a record breaking steady flush.Grey & Yellow Legged Chanterelle. Pied de Mouton. Trompette. Girolles from Scotland and Eastern Europe. Patches of  Mousseron. And from our Norfolk Forager Puffballs and Chicken of the Woods when he spots them.

Fruits

Turkish Figs represent excellent value for money. Muscat GrapesEnglish Apples are up and running & our European pear selection improves. Strawberry aka Fragolina  Grapes have hit the market in good quantities. Muscat and White Chasselat Moissac complete our high end offering from Europe’s vines. Plums remain strong. Now is the time to knock up a batch of wild sloe gin or a nice tart crab apple jelly.

Vegetables

Squash options are really opening up now and I’m not talking cordials. Here are just a few:
  • Spaghetti Squash
  • Courgette Flowers
  • Hokkaido
  • Potimarron (with it’s name giving distinctive chestnut flavour)
  • Ironbar Pumpkins
Don’t forget the mighty choux de Bruxelles which are now in full fresh force, but indulge in some of these less common brassicas on the side:- Cima Di Rapa -   Cima Di Rapa -   Romanesco -   Golden & Purple Cauliflowers -   Black Cabbage -   Purple Spouting Broccoli -   Rainbow Chard Pungent root purees, a carefully cooked piece of game and a deep irony green leaf is just about my favourite Autumnal plate. Here are some roots well worth using: -   Chervil  Root -   Parsley Root -   Jerusalem Artichokes -   Baby Parsnips -   Sand Carrots
