The Adam Handling Collection has announced that its Ugly Butterfly restaurant and Bar will close at Carbis Bay Estate on June 28 after four years.
Adam Handling MBE is a Michelin-starred chef whose focus on sustainability, zero-waste cooking, and modern British food has earned him acclaim across the industry and beyond.
He’s the force behind the Adam Handling Collection, which includes Frog by Adam Handling and Eve Bar in London, The Loch & The Tyne in Old Windsor, The Tartan Fox, and most recently, the Adam Handling Chocolate Shop.
Away from the kitchen, he is an ambassador for the Great Britain and Northern Ireland campaign, representing the best of British food on a global stage. In 2023, he was selected to create one of five official recipes for King Charles III’s Coronation - a strawberry and ginger trifle that was enjoyed at street parties across the UK.
Adam has also appeared on Saturday Kitchen Live, Great British Menu, MasterChef and MasterChef: The Professionals.
Described as an 'incredible chapter,' the team reflected on what they’ve achieved - from building a brand known for sustainability, to forming close ties with local farmers and producers, and earning national recognition through awards and listings among the UK’s top restaurants.
Adam Handling MBE said: “There is nothing but positivity here because when one door closes, another one opens. And what’s behind this next door for Ugly Butterfly and our entire team, only time will tell. Thank you to everyone who’s supported us – we’ll keep you posted on what’s next.”
Stephen Baker, owner of Carbis Bay Estate added: “It has been a great addition for our guests to have Adam and his team on the estate. Ugly Butterfly has brought a new dimension with its approach to sustainability and zero food waste, creating unique dishes.
"The Estate, with the Ugly Butterfly Restaurant and Bar situated directly above the sands of Blue Flag Carbis Bay Beach on breathtaking St Ives Bay, has a steadfast commitment to duty of care towards its environment and we welcomed Ugly Butterfly to further enhance our offering and complement our vision. We wish Adam and his team all the very best in their next chapter.”
