The Bedford Hotel in Belfast has appointed Noel McMeel as executive head chef.

THe new appointment signifies a new culinary direction for the boutique property and underlining its ambitions as a destination for Northern Irish food and hospitality.

A chef with global credentials

Known for cooking for royalty, presidents, celebrities and diplomats, Noel has built a career championing Irish ingredients, culture and heritage. Among his career highlights was helping to design the G8 Summit menu, where he showcased Ireland’s finest produce to world leaders.

A long-standing advocate for Irish food, Noel outlined his culinary philosophy in his cookbook 'Irish Pantry: Traditional Breads, Preserves and Goodies to Feed the Ones You Love', which was recognised at the World Gourmand Cookbook Awards.

His work across kitchens, books and industry initiatives has established him as one of Ireland’s leading culinary ambassadors.

Representing Northern Ireland on Great British Menu

Noel first competed on the programme in 2007, taking part in the Northern Ireland heat during series two. He returned the following year for series three in 2008 again representing Northern Ireland.

At the time, the format of Great British Menu saw chefs from each region compete in a week-long heat judged by a veteran chef, with the winner progressing to the judging panel for a chance to cook at the series’ banquet. Noel took part in this regional process in both series.

General manager Mike Gatt said the appointment marks a key milestone for the hotel’s ambitions.

He said: “Noel’s appointment represents a cornerstone in our vision to make The Bedford Hotel a culinary landmark for Belfast. His reputation for excellence and his deep respect for Northern Irish ingredients align perfectly with our ethos. Together, we will set a new benchmark for food and hospitality in the city.”

For Noel, joining The Bedford Hotel is about building a platform that celebrates Ireland’s food culture and nurtures local talent.

My mission is to craft a culinary experience that’s honest, sustainable, and bursting with local character while creating an environment that inspires and nurtures the next generation of talent.”

Investing in future chefs

Alongside leading menu development, Noel will launch a training and mentorship programme for emerging chefs. The initiative aims to strengthen skills, encourage innovation and support long-term retention within Northern Ireland’s hospitality industry.

The Bedford is managed by Focus Hotels, a UK hotel management company known for supporting both branded and independent properties with a guest-first, performance-driven approach.
