Nick Chappell replaces Shane Hughes as head chef at Tudor Room

Nick Chappell is the new head chef at the Tudor Room restaurant at Great Fosters Hotel in Surrey.  The move comes following Shane Hughes’ departure at the end of December just seven months after launching the new fine dining establishment.  When The Tudor Room reopens on 21 January following a Christmas and New Year break, it will be under new stewardship in the shape of former Michelin-starred chef Nick Chappell. Gordon Ramsay stopped by Qatar customs for trying to bring champagne into a Muslim state

Stopped by officials in Doha airport, it is believed that security staff confiscated an expensive bottle of Dom Perignon that Ramsay was carrying in his luggage.  The Kitchen Nightmare star was flying to the capital of Qatar on a business trip, it's thought that he was visiting the two restaurants he runs at the St. Regis hotel in Doha.  The Muslim state, where the 2022 World Cup is set to be held, currently has a ban on importing alcohol. Chefs going into uncharted territory with cheese, preparing it with salt cod, smoked salmon and even sushi

Cheese on sushi?  Diners used to curdle at the thought.  But now, New York chefs are topping dishes like ramen and Korean rice cakes — places where cheese once feared to tread — with the gooey goodness of aged dairy.  Weird, certainly, but some culinary experts say adding cheese allows chefs to harness the complex flavors, the creaminess and the salinity of cheese in all its myriad forms.
