Dean Bonwick returns to The Waterside Inn after four and a half years at The Crown

Dean Bonwick is returning to work at The Waterside Inn with the Roux Family after four and a half years at the Crown in Burchetts Green.

The front of house manager, who moved to the family business  to steer it in a positive direction, said he has "unfinished business" at the Bray restaurant, where he formerly worked. 

During his time at The Crown, it received a Michelin star, ranked 13th in the Top 50 Gastropub list, 35th in the Top 100 Restaurant list and was awarded 3AA Rosettes. 

Dean said working with his father had been "so  valuable."

"He is a quiet insightful man, obsessed with cooking, pubs and their future. Having previously worked with the toughest of chefs I can say I’m not sure anybody could outwork him. His technique, taste and execution of dishes after a grueling day of mise en place is something else."

As the chef patron Simon Bonwick's son, Dean remains a shareholder of the pub.  His brother George, who has been a restaurant manager at the Burchetts Green gastropub for the past three years, will take over the position of general manager. Prior to this, George worked at The Hand and Flowers and at William Drabble's Aubergine in Chelsea.
