Exclusive Hotels and Venues launch new cookery school

Exclusive Hotels and Venues has launched its new cookery school, SEASON, at Lainston House, Hampshire.

The school offers a range of classes aimed to appeal to cooks of all abilities, whether novice or confident, and is designed for them to hone in their culinary skills. A new state-of-the-art kitchen area has been built, including six double sided work stations and a demonstration table for theory and presentations. Danny Pecorelli, managing director of Exclusive, said: “With our award-winning restaurants and incredible chef talent, food and dining really are at the very heart of our business, and we feel, integral to the complete guest experience at Exclusive.  So, whether you are nervous in the kitchen, a competent cook or an aspiring professional chef of the future, we’re confident SEASON has something for everyone.” The cookery school will present classes on roasted meats, bread making, jams, marmalades and chutneys, chocolate, desserts, knife skills and the art of charcuterie. Each full or half day course will be delivered by the award-winning chefs within the Exclusive kitchens including Olly Rouse, head chef at The Avenue, Lainston House, Richard Davies, executive chef at The Bybrook, The Manor House, Matt Gillan head chef at The Pass, South Lodge and head chef Michael Wignall at The Latymer, Surrey. Local Hampshire producers and suppliers to the Exclusive kitchens as well as highly regarded chefs from the region, including Jennifer Williams from the Naked Jam Company and former MasterChef: The Professionals winner, Steven Edwards at Etch, will also take part in delivering SEASON’s programme. Guests will be able to sample their creations with the chefs in the dining room

Pecorelli added: “We’re also privileged to be able to share the use of our cookery school with some of the greatest culinary talent in the country, with guest chefs and local producers invited to share their immense knowledge with our guests. Hampshire is fast becoming the culinary capital of the UK and SEASON will be yet another reason for food enthusiasts to visit the region so we’re delighted to launch our Cookery School here.”
