Glynn Purnell announces new restaurant coming this September

This September, Birmingham’s business district will welcome Trillium - a bold new dining destination from Michelin-starred chef Glynn Purnell and wine expert Phil Innes.

The news comes months after Glynn announced the permanent closure of Purnells in October 2024. 

Purnell’s, which opened in July 2007, earned acclaim for its seasonally-influenced dishes and contemporary approach to British cuisine.

Located on Snow Hill, the new restaurant promises a fresh, flexible take on refined dining with an ever-changing menu, vibrant terrace, and curated wine experience.

Rooted in a spirit of exploration and community, Trillium will offer relaxed yet imaginative food. Guests can expect a choice-driven menu built around seasonal small and large plates designed for sharing.

Glynn has trained under the likes of Gordon RamsayClaude Bosi and Gary Rhodes.

Whether it’s a traditional three-course meal or a table full of bold bites, the menu encourages guests to eat their way, without rules.

Glynn said: “We want guests to explore the menu in whatever way suits them - whether that’s a classic three-course meal or a custom selection of sharing plates. It’s about dining the way you want to, without rules.”

The wine list, curated by Loki Wine’s Phil Innes will constantly evolve, featuring everything from natural wines and hidden gems to iconic producers, with a focus on accessibility over prestige.

Phil added: “We’re building a wine list that’s as important to the restaurant as the food. It’s not about prestige - it’s about offering a dynamic, ever-changing selection that showcases undiscovered treasures and unexpected finds. There will always be something on the list to surprise and delight.”

Designed to reflect the quiet beauty of the trillium flower, the interiors will feature rich tones of beetroot, plum, and wine-red, softened by touches of sage and petal pink. Hand-painted finishes, woodland-inspired lighting, and etched glass bring a sense of movement and romance to the space.

Trillium is set to be a place where locals, business diners, and visitors alike can enjoy creative, soul-stirring food in a relaxed atmosphere.

The restaurant opens to the public in September. Early access and tasting events will be available through Club Trillium - the venue’s insider circle.
