Head chef Alberto Cavaliere leaves Michelin-starred Pied à Terre

Alberto Cavaliere has left his role as head chef of Michelin-starred restaurant Pied à Terre.

Having previously worked at Marcus Wareing’s The Berkeley, L’Atelier de Joël Robuchon in Paris and Michelin-starred Spanish restaurant Sabor in London, Alberto took on his first head chef role at Pied à Terre at the start of this year.

But less than nine months on, he has departed the iconic Fitzrovia restaurant, leaving last week.

In his time at Pied à Terre, Alberto combined Asian-influenced flavours with French technique, alongside senior sous chef Antonis Gkoumas, who remains at the restaurant and will head up the kitchen in the interim.

Under owner David Moore, Pied à Terre is London’s longest-standing Michelin-starred restaurant, first featuring in the Guide little over a year after opening in 1991.

Pied à Terre has also had spells where it held two Michelin stars, under chefs Richard NeatTom Aikens and Shane Osborn.

Other chefs to have had stints at the restaurant over the past three decades include Marcus Eaves and Andy McFadden.

British-born

to Italian parents, Alberto turned to cheffing aged 25, after a spell in the British Army was cut short as he was medically discharged following an injury sustained during training.

He joined Pied à Terre in January 2025, replacing Phil Kearsey, who in turn had come in for long-serving Asimakis Chaniotis.

Pied à Terre commented: “We thank Alberto for his time with us.

“We'll be making an announcement on who will next take the helm at Pied à Terre in due course.

“In the meantime, we are grateful to our immensely talented senior sous chef, Antonis Gkoumas, and his team, who are stepping up to ensure the highest standards in our always innovative kitchen are not only maintained, but continue to evolve across both our omnivore and vegan menus.”

Speaking to The Staff Canteen, Alberto said: “I thank David for my time at Pied à Terre, even though it was short.

“I feel like I need to reboot and pursue different aspects in my career.

“The restaurant is definitely in very good hands.”
