As part of Restaurant Sat Bains with Rooms commitment to creating innovative cuisine, Sat has invested close to £100,000  in a development kitchen, where development chef Nanna Vestergaard, who has in previous interviews been described by Sat as their "Little Foraging Pixie", Nanna heads up the restaurant "Projects", working with ideas, taste, textures and temperatures, in a range of dishes ingredients and combinations, that have began, as perhaps, a simple idea; an inspiration that Sat has scribbled on his jotter.
