James Cochran to launch Goat's first permanent location

Great British Menu winner and the chef behind Islington's Restaurant 1251, James Cochran, is set to make his Goat pop-up permanent with a new installation at Boxpark in Croydon. 

The star of the show is the ingredient that helped him become the champion of champions in last year's competition, though an alternative option of coal-roasted cauliflower will be sold alongside it to cater for plant-based dietaries.

The former chef at The Ledbury  launched the street food concept at Lewisham's Model Market, earlier this year, serving his jerk-spiced goat on coconut flatbreads with a choice of sauces. 

"We always knew we wanted to tap into the street food market, mainly with James' famous jerk chicken but we wanted to do something different," reads a description of the project on its website

The meat is supplied by Cabrito, an initiative led by ex-chef James Whetlor to bring billy goats reared into the dairy industry back into the meat industry - reducing food waste and bringing more of the underrated meat to peoples' tables.
