Here at The Staff Canteen we felt it would be a great idea to show our appreciation to our loyal users, so to honour this we will be featuring a different member every month who we think deserves to be celebrated. This month’s winner is John Grabecki, a member who regularly contributes to our site via the app Chef+. We spoke to John  to find out more about him...

Current place of work, position and a brief overview of where you have worked before.

I am currently head chef at BNY Mellon which is an investments bank. I look after the private dining rooms in the bank. After working in some smaller restaurants in my home town of St Albans, I moved into London to work at Galvin at Windows with Andre Garrett. I then moved on to Roux at Parliament square with Steve Groves. After Roux at Parliament square I went on to L’Autre Pied, I then went back to work with Joo Won at Galvin at Windows.

What is your cooking style and what can people expect from the food on your menu?

I would say it’s modern with influences from around the world. People could expect something exciting, fun and different.

What do you like about The Staff Canteen app and website?

I like The Staff Canteen app as it helps chefs keep up with trends and news in our amazing industry.

What is your favourite dish to cook?

My favourite dish to cook has to be a Sunday roast.

Guilty pleasure: list food item / dish / ingredient that aren’t considered ‘cheffy’ but you love to eat.

What are your plans for the future?

I’m looking into starting a supper club in my flat in Walthamstow; I’m looking to start it once a month then gradually do it more. Watch this space…
