 Here at The Staff Canteen, we feature a different member every month who we think deserves to be celebrated - this month’s winner is Alan higgins.

1. Current place of work, position  

Chef and co-owner of Nautilus Restaurant in Dublin.

2. What is your cooking style and what should people expect from the food on your menu?

Clean and precise, expect classical flavours that work with plenty of twists.

3. What is your favourite dish to cook and why?

Anything when the main element in the dish is the sauce, something like a dark rich beef bourguignon or a deeply flavoured bouillabaisse. I've always been a sauce kinda guy.

4. Name a food item/dish/ingredient that isn’t considered “cheffy” but that you love to eat

It would probably be the humble mussel, the natural flavour they give off is truly exceptional.

5. What do you like about The Staff Canteen app and website?

I've been following the staff canteen since my early days. I've always got a lot of inspiration from the site over the years. The features and editorials are the best in the industry.

6. What are your plans for the future?

Keep pushing and progressing, although with the Corona virus everything has ground to a halt, the immediate focus will be to get back up and running as soon as possible.

7. Finally, the Coronavirus has had an immense impact on the industry. How have you managed to keep a level head and how would you recommend others stay positive in this difficult time?

I'm viewing this time as time to spend with my family which I wouldn't normally get to do a lot. It's also a good time to do some research, better yourself and maybe learn a few new things. We are all in the same boat.
