We spoke to Richard  to find out more about him...

Current place of work, position and a brief overview of where you have worked before.

I'm currently working as the head chef at Grebys hotel and restaurant in Grebbestad, Sweden. Grebbestad is a little fishing town on the Swedish west coast. I've been fortunate to be in a position where I can create freely and grow as a chef for almost 2 years now.

Before Grebys I don't really have anything to brag about accept for being head chef almost all of my career.

I regret locking my creativity to restaurants with no interest of gastronomy and just being interested in earning money selling "okay" food - I don't want to be just okay, I want to strive for greatness.

What is your cooking style and what can people expect from the food on your menu?

My cooking style is colourful, artistic and tasty. I can do all styles of cuisines but I prefer and cook mostly European and Asian food. Grebys is a seafood restaurant first hand so the guests can expect seeing a lot of local seafood on the menu. I also like taking something old that has been done before and making it in a new way. Deconstructed and reconstructed.

What do you like about The Staff Canteen app and website?

The staff Canteen helps bring the producers, chefs and restaurateurs together with all the foodies out there.

What is your favourite dish to cook?

I can't think of a single dish that I prefer to cook but I love to learn and cook with new techniques. Right now I'm really focused on desserts!

Guilty pleasure: list food item / dish / ingredient that aren’t considered ‘cheffy’ but you love to eat.

I'm a sucker for anything with two pieces of bread and meat between it. Preferably bacon! 

What are your plans for the future?

Right now I’m only focused on putting Grebys on the map and making it really successful. I want people to come from far away to visit us so we are able to be open every day even in the dark winter months in our little fishing village. I dream of having my own restaurant in the future but I'm not in a hurry yet.
