Current place of work, position and a brief overview of where you have worked before.

I am the head chef of The Wychwood Inn at Shipton under Wychwood in Oxfordshire. I was trained at Lords Of The Manor, at Upper Slaughter and spent my time afterwards travelling around various hotels to gain experience.

What is your cooking style and what can people expect from the food on your menu?

I was classically French trained as a chef through Lords of the Manor but my style of cooking generally likes to reflect British foods and classic dishes. I love the use of British ingredients, seasonality and recreating classics as you may have seen recently with the Eton mess and creme caramel. 

What do you like about The Staff Canteen app and website?

The Staff Canteen platforms are brilliant for chefs to see what’s going on in the rest of the industry, what’s in fashion, finding ideas and networking with many other great chefs.

What is your favourite dish to cook?

I never really have one favourite dish to cook as I always enjoy doing something new, but currently my favourite is the Chargrilled lamb with carrots and blackberries which The Staff Canteen recently shared on their social media. 

Guilty pleasure: list food item / dish / ingredient that aren’t considered ‘cheffy’ but you love to eat

My guilty pleasure is Camembert and Malbec, which more often than not I sit down after work late at night and dig in. It’s close to becoming an addiction!

What are your plans for the future?

Currently my plans for the future are to develop my  team and push for some more awards. I’m lucky to have a very young, enthusiastic team.
