Dishes will showcase ingredients from the restaurant’s kitchen garden, with trusted suppliers providing the rest.
Menus will come in three, five, or seven-course formats, including snacks, bread, and amuse bouche. Summer dishes will feature the likes of:
-
Chilled pea mousse, cottage cheese, and truffle
-
Wakame cured cod, tomato and elder ponzu, lemon purée
-
Loin of hogget with tapenade purée, tomato, anchovy and courgette
-
Sweet pineapple parfait with fennel sorbet and fennel pollen meringue
Staff will work a four-day week, with set holidays built into the restaurant calendar to ensure a healthy work-life balance - something Mark is passionate about fostering.
Design and Accommodation
Housed in a former pub dating back to 1580, The Ancient Shepherds has undergone a careful refurbishment by Emma John, retaining its historic charm.
The space includes a lounge for pre and post-dinner drinks, and seating for up to 34 guests. Five stylish, minimalist bedrooms are also available to book - with or without dining - making it an ideal spot for a food-led getaway or a relaxed stay near Cambridge.
