New Inspiring River Cottage event announced

River Cottage have announced that they are to host their next networking, coaching and inspiration event in the new year at the idyllic River Cottage HQ. The Inspiring River Cottage event will take place on Monday 12th January and will give an inspiring insight into River Cottage as well as a look into the role sustainably sourced food plays within the food industry.

Outline of the day:

09.30 Arrive at River Cottage HQ and hop into our converted tractor and trailer to take you down to the farm. There’ll be a warm welcome over tea, coffee and refreshments. 10.15am River Cottage guided tour with Head Gardener Will Livingstone. Some say that if you want to enjoy an abundance of good food at its best, with every ingredient bursting with flavour, it makes perfect sense to eat within the seasons. Hear about our field to fork approach and the opportunities and challenges of organic gardening. 11.15am Learn the ancient art of curing and smoking with River Cottage’s Steve Lamb. See how a scattering of salt, aromatics and hot smoke from oak and beech wood; applied to any meat, fish or poultry will turn it into an exotic, smoky treat. Entertaining and informing in equal measures, Steve will explain the holistic approach to delicious food through River Cottage’s ethos of sustainability, organic, local and wild food.

12.30pm Questions and break. Enjoy seasonal canapés and catch up over the morning’s events whilst lunch is set up. 13.00pm Lunch. Three course field-to-fork tasting menu, cooked by River Cottage chefs. Followed by coffee, petit fours and networking. 14.30pm

Preserving. A one hour master class looking at how to extend the life of food that in many restaurants can find its way into the bin. The three recipes covered in this session will include some core principles of pickles, chutneys and jams. 15.30pm Embedding sustainability to drive profit. River Cottage’s Head of Education, Chris Griffin, offers insight into food consultancy projects that include Marriott International and Skinners Brewery. 16.00 - 16.30pm Networking and refreshments. 16.30pm Tractor arrives to take everyone back up the hill to the car park.
