Osip to host Atsushi Tanaka for Michelin-starred Japan collaboration

Merlin Labron-Johnson will welcome Atsushi Tanaka of restaurant A.T in Paris to Osip, his Michelin-starred restaurant, for the third instalment of Osip Collaborates: Japan.

The dinner series celebrates Japanese culinary culture, a major influence on Merlin’s cooking style, while spotlighting some of the world’s most exciting chefs.

Osip Collaborates: Japan

Launched earlier this year, Osip Collaborates: Japan has already seen Merlin partner with chefs Tetsuro Maeda of Txispa in the Basque Country and Endo Kazutoshi of Endo at the Rotunda, London. Supported by Estrella Damm and Mai Sake, the series explores the artistry and heritage of Japanese fine dining while bringing leading international voices to Somerset.

The September 15 event with Atsushi Tanaka will be the third in the series, with the final dinner scheduled for 8th December, when Merlin will be joined by Kanji Kobayashi of Villa AiDA in Japan.

Atsushi Tanaka is celebrated for a unique, non-conformist gastronomic style shaped by training at some of the world’s most influential restaurants, including Pierre Gagnaire in Paris and Tokyo, Quique Dacosta in Alicante, Geranium in Copenhagen and Frantzén in Stockholm.

In 2014, he opened A.T Paris, a restaurant that has earned a Michelin star and international acclaim for its visually striking and technically refined creations. Atsushi's cooking

is light and precise yet poetic, layering flavours, colours and textures in a way that pushes boundaries while remaining rooted in elegance.

A shared philosophy with Osip

The collaboration at Osip will see the two chefs create the menu together on the day of the event, taking inspiration from ingredients freshly harvested on Osip’s farm. Merlin’s commitment to hyperlocal produce and seasonal cooking mirrors Tanaka’s own philosophy of precision and purity, ensuring the dinner reflects both Japanese culinary tradition and Somerset’s natural larder.

Guests can expect a one-off menu that celebrates provenance, seasonality and artistry, combining the elegance of Japanese fine dining with the ingredient-led approach for which Osip has become renowned.

Looking ahead to December

The final instalment of Osip Collaborates: Japan will take place on 8th December 2025, when Merlin partners with Kanji Kobayashi of Villa AiDA. The dinner will also mark Kanji’s first UK collaboration, bringing the series to a close with two chefs united by a deep respect for seasonality and the land.

Reservations

Reservations for Osip Collaborates: Atsushi Tanaka will go live on Friday 22nd August 2025, with sittings available at 6pm, 6.45pm and 7.45pm. The menu is priced at £195 per person, with supplementary drinks pairings also available.
