Rene Redzepi reveals more details about Noma 2.0

Chef Rene Redzepi has confirmed an Ocean themed menu with a strong focus on seafood and seasonality when Noma 2.0 opens next year.

A statement on the website reads, “For our new menu, you may have heard that we are changing our format to work even more closely with seasonality. In the cold months when few things grow, high season is in the oceans.”

Although Rene and the team are still undecided as to what will exactly appear on the menu customers can expect, “weird shells, deep water seaweed, the eyeball of a cod and slivers of fresh lobster.”

The news follows a video update from the chef last month where the chef explains he has been going “from farm to farm, butcher to butcher, from fisherman to fisherman” to “see what is out there”. In the video Rene said: “We’re excited for the next 14 years to push again, to learn again, to be searching, not actually 100 percent knowing where you want to be.”

Rene closed Noma last year with the aim of reopening the restaurant in a new Copenhagen location with an urban farm. Due to construction delays caused by uncovering an ancient stone wall the reopening has been pushed back until 2018 although an exact open date has yet to be confirmed.

Bookings for Noma 2.0 will be open on Thursday, 16 November at 4:00pm local Copenhagen time.
