Russell Bateman leaves The Grove to take up position at Pétrus

Russell Bateman has left Colette's at The Grove and has moved to Pétrus where he has taken up the role of head chef.

He has spent almost ten years at the acclaimed Colette’s restaurant at The Grove hotel in Hertfordshire but has decided that it is time to move on to and take up a new challenge. Russell has been appointed the role of head chef at Gordon Ramsay's Pétrus filling the vacant role left by Larry Jayasekara.

Russell started his career at Harrods in Knightsbridge and then went on to work at Chapter One and Chez Nico with Paul Dunstane. He then went on to work at St James Street, under the tutelage of Marcus Wareing. He spent two and half years working with Marcus where he helped to open Fleur, The Savoy Grill and Pétrus’ new venue at The Berkeley. Russell considers Marcus Wareing to be one of the most significant influencers when it comes to his cooking style.

He then travelled to France to work with Marc Veyrat in Annecy, learning pastry in a three-starred Michelin kitchen - La Maison de Marc Veyrat.

Upon his return to England, he worked with Eric Chavot at the Capital Hotel before moving on to Danesfield House Hotel in Marlow, working for Aiden Byrne. He has also worked at Daniel Clifford’s Midsummer House. Russell attained his first head chef role at The Feathers, where he worked for two and a half years, before finally taking the head chef job at Collette’s at The Grove.

In 2014, he was named National Chef of the Year by The Craft Guild of Chefs.
