Tom Sellers appoints new restaurant manager at Restaurant Story

Tom Sellers, chef patron of the Michelin starred Restaurant Story has announced the immediate appointment of Joe Paulinski as restaurant
manager.

Joe Paulinski’s hospitality career began in Leicester, aged 16, where he worked in a small, local Italian restaurant as a waiter, and then, at 18, shifted to four rosette Malyango in Leicester, where he worked his way up the front-of-house ladder over three years to restaurant manager.

He then moved to London and worked at Adam Byatt’s Trinity in Clapham, becoming assistant manager, and this is where he first met Tom Sellers, and also where he had his first taste of fine dining. When Thomas Keller presented his ‘pop-up’ restaurant of The French Laundry at Harrods in autumn 2011, Joe was recruited for the planning and operation of the 11-day promotion. This led to an offer of a position at Per Se in New York, and, while the visa details were being arranged, he continued working at Trinity, and also assisted Tom Sellers with his pop-up, Foreword, in Bethnal Green, prior to the opening of Restaurant Story.

On his appointment, Joe said: “I am thrilled to be back in London and working with Tom at Restaurant Story. There are exciting things to come, which I am delighted to be part of."
