The Roux Scholarship 2017

Winner of The Roux Scholarship 2017 is chef Luke Selby, head chef at Dabbous, a modern European restaurant in London.  As a previous winner of Young National Chef of the Year 2014, Luke along with five other finalists were given a recipe and ingredients for a main dish to prepare and present it to the judges. None of the finalists had any idea of what the ingredients would be and this really showcased the finalists’ ability to think on their feet.

The five other finalists were Martin Carabot of Luca Restaurant, in London, Michael Cruickshank of Bohemia in Jersey, Scott Dineen of BaxterStorey in London, Oliver Downey of Fera at Claridge’s in London and Matthew Whitfield of The Driftwood Hotel in Cornwall

Luke will spend three months training at 3 Michelin star Restaurant Nihonryori Ryugin (which offers a wide range of both traditional and modern Japanese dishes) in Tokyo under Chef Seiji Yamamoto.
