Roux Scholarship 2017 finalists

Luke along with five other finalists were given a recipe and ingredients for a main dish to prepare and present it to the judges. None of the finalists had any idea of what the ingredients would be and this really showcased the finalists’ ability to think on their feet. They were asked to prepare and serve Royal-style saddle of hare, chestnut flavoured tagliatelli and purple sprouting broccoli.
